Every producer has its own special secret mixture in making this popular anchovy sauce. Most of these formulas are century old, which were passed through generations. Mang Ramon, 42, a popular magbabagoong in town said that bagoong’s secret ingredient is wine. They put ample amount of wine into those big tapayans (jars) with bagoong. He further said that this saline product achieves its perfect taste by partial fermentation. They wait for the time when the mixture of fresh fish and salt turn into a brownish sauce with cheese like taste and fishy scent.
Bagoong is the most used sauce or dip in different towns of Batangas. A favorite dip for green mango. And a very common sauce for most fish based food. It is also used as a salt substitute in Balayan Ceasar Salad dressing and other veggie dish.
Moreover, Bagoong Balayan is rich in protein and a cheap protein source in the diet.
